Mexican Cuisine in the state of Jalisco

The typical cuisine of this area is a mix of pre-Hispanic and Spanish influences, similar to the rest of Mexico, but dishes here have very particular and special flavors which are made with their own techniques.

One of the most traditional dishes is called
birria. This is made with goat or lamb meat cooked in a spicy sauce seasoned with chili peppers, ginger, cumin, black pepper, oregano and cloves. The traditional way of preparing birria is to roast the meat and spices wrapped in a leaf from the plant of “maguey”. It is served with minced onion, limes and tortillas, in a plate that looks like a bowl.

Another dish that is strongly associated with Guadalajara the capital of Jalisco is tortas ahogadas the literal translation is "drowned torta” (a kind of baguette or sandwich). This sandwich is made with bread called "bolillo", filled with pork meat. The sandwich is then covered in a red tomato/chili pepper sauce.

Other dishes that are popular in this area are pozole, a soup prepared with hominy corn, chicken or pork and various condiments and "pipián", a sauce prepared with peanuts, squash and sesame seed. 
The city hosts a fair called “Feria Internacional de Gastronomía” (International Gastronomy Fair) each year in September showcasing both Mexican and international cuisines. A large number of restaurants, bars, bakeries and cafés participate as well as beer producers, wine and "tequila".

The blue volcanic soil in the surrounding region is particularly well suited for the growth of the blue agave plant, and more than 300 million plants are harvested there each year. Agave tequila grows differently depending on the region. Blue agaves grown in the higher parts of the region are larger in size and sweeter in aroma and taste. On the other hand Agave plants that are harvested in the lowlands have a more herbaceous fragrance and flavor.

Mexican laws state that in order for it to be real tequila it can only be produced in the state of Jalisco.
Mexico is granted the international right to the word "tequila”, The United States officially recognizes that spirits called "tequila" can only be produced in Mexico, although by agreement bulk amounts can be shipped to be bottled in the U.S.
